Im sure you all have tried stuffed mushrooms with cheese and salami. Now we have a healthier option, tasty delight for all gourmets. New recipe for stuffed mushrooms this time with guacamole sauce complemented with gorgonzola and walnut kernels.
Ingredients for stuffed mushrooms with guacamole sauce two servings :
- 4-6 large mushrooms
- 2 tablespoons soy sauce
- 1 tablespoon balsamic vinegar
- ½ finely chopped onion
- ¼ ground ginger
- 1 tablespoon of butter
For guacamole sauce :
- One avocado
- 1 Tomato chopped into cubes
- ¼ finely chopped
- ¼ fresh parsley
- ½ small pepper
- ½ tablespoon lime juice
- Salt, black pepper and cumin to taste
For decoration (optional)
- 50 grams of gorgonzola
- ¼ cup walnut kernels
1.Heat the oven to 200 degrees.
2.Wash, clean and dry the mushrooms, then put in a small pan.
3.Soy sauce, garlic, ginger and oil mix in a small bowl. The mixture with the spices place on each mushroom and one part put into the pot. Leave the mushrooms to marinate for 15 minutes.
4.Then place in the preheated oven to bake about 10-15 minutes, depending on size and desired softness of mushrooms. During baking, occasionally remove the pan to overflow the mushrooms with liquid.
5..Remove the mushrooms and leave to cool briefly.
6.Meanwhile, mush the avocado. In the blending jar with avocado, add tomatoes, onions, parsley and pepper (without seeds). Mix the sauce and season with lime juice, salt, pepper and cumin.
