Ingredients for spinach-broccoli soup with leeks
- 1 Tablespoon olive oil
- One piece of leek, finely chopped
- Four cups chicken bouillon cubes dissolved
- Large broccoli
- 6 cups of spinach
- 50 grams freshly grated Parmesan
- 2 Tablespoons tahini
- Salt and pepper to taste
- One avocado cut into cubes
- Lemon juice
Heal the oil in a deep frying pan over medium heat. Fry the leeks for about 5 minutes, stirring continuously. Add the bouillon cubes and leave to boil. Then add the broccoli. Leave to boil for another 5 minutes. Remove from fire and add the spinach, parmesan, tahini and spices. Stir well. Spinach will remain fresh, but it will cook.
